Recipe:
2/3c raw cashews
1c boiling water
1tsp vanilla essence
1/3c maizena (corn flour)
1/3c honey
2c 100% pineapple or berry fruit juice
4c strawberries
Method:
Blend the cashews and boiling water till smooth.
Add the rest of the ingredients and blend again till smooth.
Pour into a pot and bring to a low simmer and stir till mixture thickens.
Once thick pour the mixture into a clean glass container and cover with cling film directly onto the yoghurt to avoid a skin forming on top.
Allow to cool.
Enjoy alone or with fruit to on muesli.
Versatile comes in many colours...if you'd like to get creative with this recipe and change it up a bit, try substituting the fruit and juice components of this yoghurt recipe as described below.
Pink - use strawberries with 100% berry fruit juice
Purple - use black berries or blueberries or a mix of berries with 100% berry fruit juice
Yellow - use Pineapple with 100% pineapple fruit juice (to add a little more decadence
substitute the water for coconut milk)
- use ripe peaches with 100% peach fruit juice
- use mango with 100% mango juice
